المقادير:
2 بيذنجان.
1 بصلة.
3 فص ثوم.
قرن فليفلة حر.
ربع كاس طحينة.
2 ملعقة زيت زيتون.
4 ملعقة عصير ليمون.
1 ملعقة ملح.
ربع ملعقة كمون.
للزينة: بابريكا، زيت زيتون
الطريقة:
1. سخّني شواية الفرن. ثبتي الرف العلوي.
2. باستعمال سكين حادة إقطعي الباذنجان طوليا إلى نصفين. برأس السكين إعملي عدة خطوط أو شقوق في الباذنجان لتشكلي مربعات صغيرة.
3. باستعمال فرشاة صغيرة إمسحي سطح الباذنجان بقليل من زيت الزيتون، أنثري القليل من الملح، الفلفل والشطة حسب الرغبة.
4. إقطعي البصل نصفين و ضعي في الصينية مع الباذنجان، ضعي قرن الفلفل.
5. ضعي الباذنجان في الفرن تحت الشواية لمدة 10-15 دقيقة إلى أن ينضج ويلين تماما.
6. دعي الباذنجان يبرد قليلا، ثم باستعمال الملعقة إستخرجي لبّ الباذنجان من القشر وضعيه في طبق عميق. قشري البصل.
7. في إبريق الخلاط ضعي الباذنجان، البصل، الثوم، الفلفل، الطحينة، زيت الزبتون، عصير الليمون والملح، شغّلي الخلاط على سرعة متوسطة إلى أن يصبح المتبل ناعم حسب الكثافة التي تفضلين إذا كنت تفضلينه خشنا أو ناعما.
8. وزعي المتبل في أطباق للتقديم وزيني بالبابريكا وزيت الزيتون. قدميه مع الخبز العربي.
